Wire Works single malt English whisky, finished for the first time in our very own Derbyshire rum casks. Bottled at cask strength of 57.2%.
Maturation & Finishing
This is a vatting from two rum casks resulting in a very limited release of just 558 bottles (70cl).
The lightly-peated single malt spirit was matured initially in two American oak ex-bourbon barrels (from our long-term friends at Heaven Hill Distillery). Once disgorged, the spirit was slow-proofed to a lower ABV and finished in two American oak casks previously been for maturing our rum.
The finishing period for this release was significant at approx. 17 months., which covered two summer seasons. Finishing the single malt in rum-seasoned casks adds another dimension of flavour, and the combination of the initial maturation and extended finish make this release the oldest release to-date of Wire Works Whisky.
Rum-seasoned casks
We set out to create a Cask Aged Derbyshire Rum for two reasons. Firstly to make a proper rum from scratch here in the region i.e. fermented, distilled and matured in Derbyshire. Secondly, giving us the opportunity to generate our own supply of fresh, rum-seasoned casks with which to finish Wire Works Whisky.
The rum casks were disgorged (rum emptied) and refilled with single malt within a matter of days, which would be almost impossible to achieve if we were sourcing the rum casks from other parties (what most whisky distilleries have to do). This gives this release full Derbyshire provenance and, as far as we know, the fact the whisky and rum were both made on a single site (at White Peak Distillery) is unique.
Tasting notes
Orange, nuts and caramel on the nose, with pear and shortbread on the palate, hint of boiled sweets and a warm finish.
