Tasting Notes:

Dark toffee and candied ginger and sultanas on the nose, with smoky cereal, white pepper and liquorice on the palate, and apple pie, fizzy sweets, leather and a whisp of smoke on the finish.

Nose Black treacle, eucalyptus, vanilla custard, sultanas, prunes.

Palate Oily mouthfeel, leather, white pepper, fruit salad sweets, smoked maple cured bacon.

Finish Baked apple pie, fizzy cola bottles.

Cask # 18-124, an American oak STR cask filled with our house-style lightly-peated spirit, has been maturing in our warehouse on the banks of the River Derwent in Derbyshire since 2018. STR stands for shaved, toasted and re-charred; a refurbished cask style developed & optimised for spirits maturation, and having previously been used for red wine maturation.
